The good traits of the Piqual olive are wonderful: big olive flavor, long strong shelf life, and abundance of production. Yet anyone in the olive oil business is familiar with the distinct "aroma" of traditional Piqual Olive Oil. There is a lot of discussion as to how that distinctive scent developed, and it s even said that the IOOC doesn't consider such a scent a defect. But this is the different new vision: ORO BAILEN EVO does not have the traditional Piqual nose. It is deep green, vibrant and fruity. The production story is that of a family operation. They own their mill and the orchards that are in the foothills of the Sierra Madre in a traditional Piqual cultivation area. The orchard location allows the producers to be a little less weather dependent, as the foothills plot is somewhat cooler. These things combined with their superior production standards, yield a consistent outstanding product. And honestly, this stuff tastes like olive juice.
