Black Truffle Salt and Saffron Salt

We decided to produce our TRUFFLE SALT and our SAFFRON SALT for the simplest of reasons: We have excellent salt producers, and can recognize value in ingredients. We know what we have, its value, and it proper relationship to the market. THE RETAIL PERSPECTIVE ABOUT THESE NEW ITEMS: Our experience is that Americans like to buy what they can use, so these babies are 2 OUNCES, and have a really sexy retail. Just look at the packages: something any retailer would be proud of and could stock near the Saffron threads and Espelette powder.

TRUFFLE SALT & THE SMOKE AND MIRRORS OF IT ALL....
When we looked at doing this, we tasted everything on the market and decided upon our own formulas. Why? Because we can use a great base salt for these items. In reading the claims of truffle salts, we were surprised by the claim of "x"% of truffles. When we looked at the product, there didn't seem to be that 5% coverage folks were claiming, nor was anyone disclosing the porcini powder that we organileptically (that means there was a smell of porcini and a taste of porcini, so it must be porcini) detected. The smoke & mirrors of percentages is that IF the powder were hydrated, then it would be the equivalent of "X" %. Don't ya love the food business sometimes? AND, there is the business of the quality of truffles. We almost fainted when we read the ad copy for one truffle salt featuring "black summer truffles". This is the problem with copywriters doing foodstuff.... summer truffles have almost no flavor or smell. The cost of summer truffle powder is about 75% less than black WINTER truffles. So when someone is bragging about their flavorful summer truffles... you be the judge!

BLACK TRUFFLE SALT K.L. Keller Imports' Black Truffle Salt is a combination of the black winter truffle powder, truffle essence for flavor and smell, and black summer truffles and porcini powder for the coverage the retail public is so insistent upon in a fine textured Spanish sea salt which contains no anti- caking or flowing agents!!!

SAFFRON SALT is simple. Stellar Spanish sea salt, bits of saffron threads and a tasty custom ground saffron powder to fill it out. All this and no anti- caking or flowing agents!!! We HATE those things. This is terrific as a rub on shrimp (remember it's salt though) that get grilled or broiled, or on roasted chicken (beautiful color, too!)
