Black Truffle Oil

Alright, as one might guess, when we decided to go into the truffle oil business, we went out and tasted a whole bunch of thea...about 10 in fact.

From this adventure, some really interesting things came to the forefront: although most of the items we tasted were in code, several of them were rancid/oxidized, including some packaged in metal cans. At first, being on the insider's track in the oil business, we assumed that there was some problem with the chain of storage (i.e. the oil got cooked.) BUT, as we looked into this deeper, we came to realize that often the TRUFFLE oil producers were not the oil producers and by and large the ones that weren't specifically in the oil business were doing what other co-packers would do...buying oil.

The oil they bought could have been in code at the time of production, but now 6-10 months into the TRUFFLE OIL's life there were plenty of unpleasant taste collisions. You, too, have tasted this kinda' stuff. What we at the K.L. Keller development farm are doing is truffling with fresh, custom distilled truffle essence and the 2009-10 harvest of the Antara EVO. Why Antara?

The whole story of truffle oil is the magic marriage of the oil and the truffle flavor. Grape seed oil brings nothing to the table except an oil texture on the pallet , and on the other hand, a huge olive oil would be, well...just too much stuff going on. ANTARA is the people's oil: light, fruity, a little buttery AND it compliments the truffle flavor. So once again we are doing what we think is right for the product...and right for the food.

And yes, to answer every locavore's question, we did try several California oils, but we couldn't get the complimentary layers of flavor we needed to provide our favorite food folks (YOU) with the quality of product we are known for...So give this a try: the flavor makes us happy, the price is right, and the package has that same K.L. Keller Family look.
